We are very pleased to announced the launch of the ME Association’s Cook Book: Cooking for Me!

Nutritious, Delicious, Trouble-Free Recipes for People with M.E., Families, Friends, and Carers…

Featuring Healthy Living James with introduction and nutritional notes by Sue Luscombe, Diet and Nutritional Adviser to the ME Association.

Cooking for Me is a 84-page full colour book, with a wide-range of wonderful recipes that have been tried and tested by people with M.E.

We have also included colour-codes with each one of over 60 recipes to help you select the one that is right for your dietary choice!

We feature meat-based and fish options, vegetarian, vegan, and gluten free alternatives, and plenty of shortcut tips to help cut down your kitchen time.

Who says you can’t have great food without hours slaving over the hot stove? Not us. We reckon you can, after all, have your cake and eat it!

Cooking for Me was an idea from Katie Meehan (Social Media Manager), designed and produced by Caroline Cavey (Magazine Editor) for the ME Association.

With huge thanks to Sue Luscombe, Hon Diet & Nutrition Adviser to the ME  Association and to James Wythe (Healthy Living James) for generously sharing some of his wonderful recipes.

Eating well is important, especially if you suffer from ME/CFS.

Whilst there is no research to prove that a particular diet, or nutrient, cures ME, there is a huge amount of research on nutrition and what is needed to keep us healthy.

The ME Association Cook Book

We need many different nutrients for the constant, complex, interactions in our bodies. They provide energy and help our immune systems to function properly.

Therefore, the greater range and balance we eat the better. The saying that ‘variety is the spice of life’ still rings true!

Recent emerging evidence suggests that our gut microbes, or gut microbiome, is also important for our immune system, physical and mental health. A diverse range of plant-based foods is key to helping our gut microbiome thrive.

The contributors acknowledge the limited energy levels of people with debilitating fatigue and give some tips and shortcuts to help you manage the effort of food preparation. We have given a star-rating as a guide to which recipes will be easier to prepare.

This ME Association Recipe Book contains a wealth of recipes with different flavours and tastes. We hope this will tempt you to expand the range of foods to enjoy, and that you will be inspired to try something new and different.

Healthy Living James

James Wythe is fully qualified Health Coach who has a passion for healthy living, focusing on quick, healthy, and easy recipes that transform the way you think about food.

He specialises in creating recipes that are free from gluten, wheat, dairy, eggs and refined sugar. Most of his recipes are plant-based/vegan.

James became very ill nine years ago which left him bedbound and housebound for the next four years.

Since then he has been running his successful blog, Healthy Living James.
